Sweet Teriyaki Veggie Kabobs | Vegan | Gluten-Free

Summertime is officially here! In Austin, you get reminded this on a daily basis because the heat just does not seem to let up. But even the sweltering heat, grilling season goes into full effect. 

My Sweet Teriyaki Veggie Kabobs are the perfect option for you to break in your grill. Along with fresh ingredients, this recipe is marinated with my sweet Mango Teriyaki Sauce for maximum flavor. It takes only minutes to prepare and tastes great with fresh veggies.

Prepare It

How long you allow it to marinate will determine how rich the tempeh tastes. Since tempeh is firm,  and eight hour marinade time is recommended. Simply prepare it in the morning before work and cook it for dinner that same night,

First things first, put all the ingredients from the Mango Teriyaki Sauce in a small bowl and whisk to combine. Once finished, chop up your tempeh into ½” cubes so that they will fit properly on the skewers. Then, place your tempeh cubes into a medium sized bowl and pour in your marinade.

Using a spoon, stir the tempeh around so that your cubes are fully covered*. Then cover with a clean towel or syran wrap and place in the fridge to marinate. Let it sit for a minimum of 60 minutes and up to 8 hours.

*If the marinade doesn’t cover the tempeh fully, add up to 1 cup of filtered water. 

 

Once your marinade it close to finishing, chop up your peppers, onion, and pineapple into ½” squares. Air on the side of chopping larger pieces of so they don’t fall off your skewers while grilling.

Grill It

Take your marinade out of the fridge and remove the tempeh from the marinade (keep the extra marinade for later). Assemble your skewers with the ingredients in any order you please! Just remember to leave a little room on the bottom for ease of handling.

Once you’ve assembled the veggie kabobs, heat your grill over medium-high heat. Once hot, spray a little non-stick spray on the surface and place kabobs on top. Make sure to leave the bottom part of the skewer off the edge of your grill so you don’t burn your hands while flipping.

Grill your kabobs for ~5 minutes on each side. During this time, you can brush the extra marinade on the kabobs every couple minutes as they grill. This will create a more robust flavor upon eating!

Eat It

Allow your veggie kabobs to cool for one minute before serving.

2 cups fresh pineapple, chopped (alternatively, you could use one can of pineapple chunks)

1/2 green pepper, chopped

1/2 red pepper, chopped

1/2 medium purple onion, chopped

directions :

  1. Prepare the ingredients for the Mango Teriyaki Sauce to use as a marinade. Once finished, pour it into a medium sized bowl.
  2. Place chopped tempeh in the same bowl and mix until the pieces are covered in the marinade. Cover your bowl and allow to sit for a minimum of 60 minutes and up to 8 hours.
  3. After marinating, place tempeh, pineapple, peppers, and onion onto skewers (save the extra marinade).
  4. Preheat your grill over medium/high heat. Spray some nonstick spray on the grill surface and place your skewers on top. Cook for ~5 minutes each side, brushing on extra marinade as desired.
