You are witnessing history: my first ever healthy, dessert recipe! I’ve come a long way from my old habits of copious amount of meat and dairy that you can read more about here.
Now, it’s all about the good stuff. My Healthy Pumpkin Pie Freezer Bites are the perfect example of having your cake and eating it too.
Not only are they gluten-free, but also refined sugar-free! Yes, you read that correctly, no added sugar.
Allow me to share why these are the new superfood.

Your New Superfood: Medjool Dates
Why dates? One, they’re nature’s candy and two, since there is no official definition of superfood, I can declare it as such.
*My mind was blown when I learned this.
Here’s the nutritional profile of a date. A 3.5-ounce (100-gram) serving provides the following nutrients:
- Calories: 277
- Carbs: 75 grams
- Fiber: 7 grams
- Protein: 2 grams
- Potassium: 20% of the RDI
- Magnesium: 14% of the RDI
- Copper: 18% of the RDI
- Manganese: 15% of the RDI
- Iron: 5% of the RDI
- Vitamin B6: 12% of the RDI
As you can see, they’re packed with a dose vitamins, which are always best consumed in food. So if you have not tried dates before, now, is the best time!

Eat These For Dessert
One serving size of dates (about 4 medium dates) is enough to satisfy even the most ravaging sweet tooth. So instead of binging on cookies or ice cream that’ll run you 500+ calories, opt for a handful of dates instead.
You could even half the serving and eat two dates with a big spoonful of peanut butter. That’s my personal favorite!
If you exercise regularly, add chopped dates on top of a salad for a boost of potassium.
Additionally, try adding chopped dates in your green smoothie for a touch of sweetness. Or in a bowl of hot oatmeal in place of sugar.
Whichever you prefer, it’s a bulletproof way to eat less sugar.

For best results, allow these pumpkin pie bites to freeze overnight. One hour will freeze just enough to not fall apart. These will stay good in the freezer for up to three months.

ingredients :
1 cup dates, soaked
1 cup oats, lightly pulsed
1/2 cup crushed pecans
1/2 cup pumpkin puree (not pumpkin pie filling)
1 tbsp flaxseed meal
1/2 tsp pumpkin spice mix
1/4 tsp sea salt
notes :
*The bites will not fully freeze after one hour, however they’re still delicious. For the best experience, allow some to freeze overnight.
directions :
- Bring two cups of water to a rolling boil. Remove from heat and add dates, soaking for 15 minutes.
- As the dates soak, lightly pulse your oats to break them up. Dump out into a small bowl and set aside.
- Once dates are finished soaking, add them to a food processor, pulsing in low until a thick jelly forms (you may need to add one or two tbsp's of water to help process). As you pulse, scrap the sides as needed.
- Finally, add in the rest of your ingredients (including oats) and pulse on low until mixed. Using a scoop or your hand, roll into golf-ball sized balls and place in the freezer on parchment paper for one hour to firm*.
