peach mint pineapple smoothie

If you know me, I love mint. Especially the smell of freshly chopped mint. It’s distinct and amazingly refreshing.
That’s why I had to add in into this recipe. I drink a smoothie everyday, so this was a perfect addition. I also thought to myself how I can get a little slice of Texas into it too.
Peaches are a staple here in Hill Country. There is a small town called Fredericksburg that is about 90 minutes from Austin that sits right in the middle of it. My wife and I visit there a couple times a year, especially when we have guests.
Fredericksburg is known for it’s wineries and all of the small peach pop-ups on the side of the highway. It’s a refreshingly cool way to chill out during summertime in the unforgiving Texas heat.

The grocery store sells the peaches from Florida, but prefer the variety from here. I mean what Texan doesn’t like things homegrown in Texas? Sorry mom, I’m a Texan now.
Now, the smoothie. This fruit concoction is a refreshing everyday drink. It’s particularly perfect lounging out by the pool on a hot summer day.


In addition to the fruit, I added in a heaping teaspoon of finely chopped mint to boost the flavor. Hemp seeds were added for protein, juice for sweetness, and ice for thickness. Next time you get your tan on, give a try.
This smoothie would also be great as a post workout smoothie or as an alternative for dessert!

ingredients :
1 cup unsweetened almond milk (or favorite plant milk)
1 cup peaches, frozen and sliced
3/4 cup pineapple, frozen and sliced
1/2 cup orange juice
1 tbsp hemp seeds
1 tsp fresh mint, finely chopped (or 2 tsp dried*)
handful of crushed ice (about 1/4 cup)**
notes :
*I highly recommend using fresh mint here. Dried herbs just do not taste the same as fresh, especially in smoothies.
**If you prefer to a thinner texture, simply add less ice. Additionally, you can also add 1 tbsp of water at a time until you reached your desired consistency.
directions :
- Add all ingredients to a high-speed blender and blend until smooth.
