Sunday Mornings are the Best
It’s a perfect time to relax, disconnect from our busy lives, and enjoy the beauty of the present moment. However, one event on Sunday mornings that I miss most is the big breakfast.
Before going vegan, this would look like a platter full of bacon, eggs, toast, and more; the works (to clarify, I don’t miss the foods themselves, but more the social aspect of sharing a big breakfast with friends and family).
However when I started eating vegan, I found a couple of breakfast staples and have stuck with those. Oatmeal, green smoothies, and the occasional pancakes.
It was just easier to stick to the basics while I navigated this new lifestyle.
But then I got thinking of skillet meals and how much I enjoyed them. I also thought of the how it could be enjoyed by everyone, bringing back the social breakfast I missed dearly.
That’s exactly how this idea was born.
I chose Field Roast because they are premier Vegan sausage brand; and most widely available. Their grain-based sausages come in several different flavors, my favorite being the Apple Maple Breakfast Sausage used in this recipe.
The sweet apple maple flavor in the sausage works well to balance the bold spice mixture. If apple maple isn’t available at your store, Smoked Apple Sage works well as an alternative!
So next Sunday when you’re craving a big breakfast, make this Vegan Sausage Breakfast Skillet. Chop of some veggies, heat up the skillet, throw it all together with the seasoning blend, and top it with a big spoonful of creamy guacamole. You will be well on your way to a perfect Sunday morning.

6 links Field Roast Apple Maple Breakfast Sausage, diced
2 red potatoes, diced
1 medium tomato, diced
1/2 green bell pepper, diced
1/2 yellow onion, diced
2 garlic cloves, minced
1 tsp seasoning salt
1/2 tsp black pepper, ground
1/2 tsp garlic powder
1/2 chili powder
1/2 tsp cilantro, dried
1/2 cup water (for sautéing)
serve with :
- Heat a large non-stick skillet over medium high-heat. Test heat by splashing some water on the pan (once it sizzles, you're ready).
- Add potatoes to pan, season with salt and pepper, and sauté for 5 minutes. Stir frequently and add 1 tbsp of water at a time, as needed, so the potatoes don’t stick.
- Turn down heat to medium and add onion, garlic, bell pepper, tomatoes, and the rest of your seasonings to the pan. Cook for 3-5 minutes or until lightly browned.
- Add in your vegan sausage, stir, and cook for another 2 minutes. Serve immediately!
