Antioxidant Packed Gingerberry Smoothie | Vegan and Dairy-Free

I took the weekend to experiment with several different smoothie recipes. There were a couple winners and a couple losers. This one, was a clear winner.

On Sunday mornings, my wife and I go to the local supermarket, HEB, and take advantage of their curbside pick-up. It’s fast, extremely convenient, and saves us from impulse buys in the store. But sometimes we treat ourselves with a couple of our favorite snacks.

Lenny and Larry’s Complete Cookie (snickerdoodle flavor) being one and kombucha being the other. I have tried several brands up to this point and they all taste great, but the go-to is GTS Kombucha.

Inspired by Kombucha

Normally, we choose the original flavor because it has the least amount of sugar. However, this particular curbside pick-up delivered an unexpected joy.

Our personal shopper accidentally picked up the gingerberry flavored kombucha versus the original flavor that we ordered. It was understandable because the colors on both bottles are very similar. I was feeling adventurous that day, so I opted-in.

On the drive home, my wife and I were amazed by the taste. At that very moment I knew I had to recreate this flavor in a smoothie. Luckily, I already had all of the ingredients I needed for this recipe, so as soon as I got home, I started taste testing.

I used coconut yogurt instead of milk to boost the thickness. The yogurt also mixed well with the protein powder. Most times when adding protein powder to shakes, it makes it a little gritty, but the yogurt helps hide it.

Nailed It

After a couple trials to determine the right amount of fresh ginger, I finally nailed it. I was so pumped afterwards! It has been one of most enjoyable times so far creating recipes.

I hope you enjoy sipping this smoothie as much as I did creating it. It’s packed with delicious, antioxidant-boosting ingredients to help satisfy your body as well as your stomach.

This was an incredibly thick smoothie, so if you prefer a thinner one, use less ice. I also highly recommend using fresh ginger as it compliments the tartness of the berries better than powdered.

Use it an immune-boosting smoothie, post workout shake, or have it for breakfast!

ingredients :

1.5 cups berry medley (I used raspberries, strawberries, and blueberries)

1 cup greens, packed (kale or spinach are my favorites)

1 medium medjool date (make sure to remove the pit)

1/2 cup non-dairy yogurt (I used SO Delicious Plain)

1/2 cup orange juice

1/2 cup water

1 scoop vanilla plant based protein (I use Orgain Sweet Vanilla Bean)

1 tsp fresh ginger, grated (or 1/2 tsp ground ginger)

handful of crushed ice (about 1/4 cup)*

notes :

*If you prefer to a thinner texture, simply add less ice. Additionally, you can also add 1 tbsp of water at a time until you reached your desired consistency.

directions :

  1. Add all ingredients to a high-speed blender and blend until smooth.
